Homemade Pizza Dough Recipe/ Sourdough Pizza

I have been making homemade pizza for over 10 years now and I’ve perfected my recipe and now you can enjoy making it for your family too. I am also sharing my sourdough pizza dough recipe which has a completely different crust result and flavor and its my favorite. You can make classic or sourdough which has a little tang to it.

A few things to note: all flour is different so if your not using the same brand as me it make require ore or less. I use a stand kitchen aid mixer to knead my dough, you can do it by hand if you need to.

Regular Homemade Pizza Dough

My homemade pizza dough makes 4 large pizzas and or 6 large calizones.

Mix together and let sit till foamy 2 cups hot water around 120’F, 1.5 tsp dry rapid rise yeast, and 1 Tbsp sugar.

In a stand mixer fitted with dough hook add foamy yeast water mixture, 5 cups of flour (Costco Organic all purpose unbleached flour) and 2 tsp sea salt. Mix on low till it comes together then increase to medium and let it knead the dough for a good 5-8 minutes. Once he dough is together, not to dry or sticky separate the dough into 4/5 dough balls the size of your fist about 4 inches wide and tuck the dough under to shape a ball and add to a greased small bowl covered to proof for 1-2 hrs in a warm area. See YouTube video for more details. It’s the simplest recipe and doesn’t require lots of yeast.

Once proofed for 1-2 hrs and reached the top of the bowl, take it out and start turning it in your hands to create a large circle like they do at pizzerias. DO NOT gather it into a ball or knead it more. just spread it slowly into a 12-15 inch circle or the size of your pizza baking steel. Add your toppings and do not go heavy on the sauce, this is a thinner crust pizza but you can have a thick edge crust.

Set your oven to 500’F if using a pizza stone and let it heat for about 20 minutes before adding a pizza on it. Set it to the middle rack and bake for 6-8 minutes till crust is golden to your liking. I will say the pizza oven I use make the crust dak but its super soft and amazing. The pizza oven bakes the pizza in less than 2 minutes and its like your eating a traditional Italian pizza.

Pizza Oven Portable

The Pizza Oven is amazing and such a game changer for making delicious Italian homemade pizza. I got it on sale and got a few accessories to make it easier to bake in. I hook it up to propane and let it heat up to 600’F + for about 25 minutes and it bakes each pizza in less than 2 minutes. You simply add your prepared pizza to it and wait 10 – 20 seconds before slowly turning it to get a wonderful even bake from the flame.

Sourdough Pizza Dough Recipe

Sourdough taste a bit different and I will say if you want a tangy pizza crust let the dough sit in the fridge for 2-3 days the longer you let it cold proof the tangier it’ll be. I like that I can use my sourdough bread recipe for the pizza and use it same day or the next or wait 3-5 days.

Sourdough pizza recipe you’ll need: scale, 250 g water, about 120-150g of active starter your leven, 400grams flour, and 10g salt. mix the water, leven together, then add the flour and mix, wait 5 minutes and then use your hands and mix in the 10 grams of salt. cover and do 3/4 stretch and folds over the next 2 hrs or when you can. If making for same day dough, let it rest about 2 hrs and then separate into 4 pizza balls. If making like normal sourdough bread keep it covered and let it cold proof overnight. the next morning take it out and le tit sit for about an hour on the counter then separate into 4 equal pizza dough balls. and cover each shallow bowl and let it either cold proof longer or proof on the counter for 3-6 hours. I like to take it out of the fridge and let it come to temp before working with it because its easier. Its a wetter dough, see YouTube video so it stretches easily and you’ll want to flour the surface to it doesn’t stick to your pizza peel.
